This world-famous drink is filled with probiotic from the Greek yogurt, sweetened with juicy mangoes and fragrant with cardamom along with the nutty touch from pistachios. What else do you need, right?

And suddenly here in Northern California it’s a shorts and tank top weather. Can you believe it? We are not even one week into February and the Sun is way too bright. Sorry, God Sun…, your brightness is not really welcome. We need to have foggy, chilly days in February with showers here and then…, certainly not an overly bright sun smiling down on us. I’m just not ready to pack off my sweaters, flannel pjs and boots yet.

 

Anyways, since the weather warmed up and suddenly it was an ice cream and popsicle kinda weekend.., I had this huge Mango Lassi craving. Like a sudden got-to-have-it now kinda craving. I had frozen mangoes (I usually freeze fresh fruits when they are abundantly available), I had Greek honey yogurt and I certainly had pistachios and cardamom handy. I dumped everything in my Vitamix and gave it a good blend. Within seconds and with less than 5 ingredients, my delicious Mango Lassi with Cardamom and Pistachio was ready.

  • 1 cup diced fresh or frozen mangoes. You can use mango nectar or mango pulp as well
  • 1 cup honey Greek yogurt or regular Greek yogurt
  • 1/2 cup milk
  • Handful of pistachio
  • 1 cardamom

METHOD:

  • Add all of the ingredients to the bowl of a blender.
  • Puree until smooth. Serve immediately!
