Go for an imaginary culinary journey to India with this awesome 3 Ingredients Pista Kulfi recipe. There is no cream in this Indian ice cream. This kulfi is made by simmering and reducing the milk and then adding crushed pista into the creamy milk.
Kulfi is Indian Ice Cream. If you haven’t tried Kulfi yet, I’m sorry to say – your palate is undereducated. So, stop reading this post and scroll over to the ingredients list, put them together and make yourselves some Kulfi. Yeah? This is the best summer refreshment ever which is quick and easy.
Kulfi is as versatile as it goes. Really. The basic ingredients always remain the same which is Milk and Condensed Milk. The flavouring totally depends on you. Since I’m crazy about Pistachio or Pista, I made myself some Pista Kulfi, but hey – you don’t have to listen to me. Go with almonds, saffron-rose water…even berries. Kulfi is a very forgiving dessert and no way you can mess it up unless you are one of those rare ones, who don’t know how to boil milk. Ha ha
So, in this 3 Ingredients Pista Kulfi recipe – the ingredients are Milk, Condensed Milk and Pista. Easy, right?
Traditionally Kulfi is set in Kulfi moulds which are tall aluminium washable and re-usable moulds. But if you don’t have them, no worries. Use small paper cups instead.
(1 cup = 250 ml)
- 4 cups or 1-litre full-fat milk
- 400 ml or 1 can condensed milk
- 1 TSP cardamom powder
- 1 TBSP pistachios (chopped)
- 3 tablespoons pistachios (grounded)
- Rose essence(optional)
Place a heavy bottom saucepan on medium heat. Add milk and let it come to a boil.
Once the milk comes to boil, reduce heat and cook the milk for about 8 to 10 minutes till it is reduced and become thick in consistency.
Add the condensed milk and stir vigorously to mix completely.
Add the pistachio powder and green cardamom powder. Mix it well.
Now switch off the gas. Leave the kulfi mixture on the kitchen counter to cool off completely.
Then pour into kulfi moulds and secure the airtight caps. Freeze in the refrigerator freezer for 4-6 hours.
Take out of the freezer 5 minutes before serving.
Unmold the kulfi and serve with chopped pistachios.
