SESAME COOKIES vs. SESAME LADDU/TIL LADDU

These gluten-free black sesame cookies are very similar in taste and texture to Sesame laddu or til laddu, which is a famous Indian sweet made from sesame seeds and jaggery (unrefined cane sugar). I grew up enjoying these til laddus during Makar Sankranti in India. These cookies are similar to the Sesame laddu’s rich and nutty flavor. The sesame seeds are roasted until they turn golden brown, which enhances their natural aroma and taste. The toasted sesame seeds are then ground into a coarse powder. Jaggery, which is known for its deep, caramel-like flavor, is melted and mixed with the ground sesame seeds. The mixture is then shaped into small, round laddus or balls.

PRO TIPS TO MAKE THE BEST TIL LADOO COOKIES

Quality Ingredients: Use high-quality almond flour for the best results. Also, ensure your black sesame seeds are fresh for the best flavor.

Sweetness Level: Adjust the amount of maple syrup based on your preferred level of sweetness. Remember, maple syrup is not just a sweetener but also adds a distinct flavor to the cookies.

Consistency of Dough: The dough should be firm enough to roll into balls. If it’s too sticky, add a bit more coconut flour. If it’s too dry, add a little more maple syrup or a splash of non-dairy milk.

Baking Time: Keep a close eye on the cookies while they’re in the oven. They can go from perfectly baked to burnt quickly.

Cooling: Allow the cookies to cool completely on the baking sheet before moving them. They will firm up as they cool.

Storage: Store these cookies in an airtight container at room temperature. They should stay fresh for about a week.

Flavor Enhancements: You could also add some almond extract or a touch of cinnamon for extra flavor.

Evenly Sized Cookies: Use a cookie scoop or tablespoon to ensure all cookies are the same size. This will ensure they bake evenly.
