These coconut cream cheese cookies are baked without eggs and they taste amazingly chewy yet have a melt-in-your-mouth texture!

Keeping kids busy on their spring break can be hard work especially if you are a working mom like me who has a full-time job. We usually don’t go on any family trips during spring break, as both my kids have two separate spring break schedules. Well, we do local things like a day trip to Tahoe, etc. but nothing more. So, yeah keeping my little one off the video games can be challenging when he has no school and I keep devising ideas and tricks to teach him something new (at least one thing) during his vacation.

This time I thought I will bake some cookies with him. Usually, for kids, cookies mean nothing but Soft Chocolate Chip Cookies Recipe, but I had resolved to bake these Coconut Cookies with him. Introducing kids to new flavors is cool. You never know, they may surprise you by liking them, and, that’s what happened. He LOVED the Coconut Cream Cheese Cookies (One Bowl) Recipe, which he helped make them!

INGREDIENTS NEEDED TO MAKE CREAM CHEESE COCONUT COOKIES

Made with desiccated coconut, cream cheese, and all-purpose flour, these egg-free coconut cream cheese cookies are THE best!

The texture of these Cream cheese cookies is chewy, sweet and mildly citrusy. The star ingredient is definitely the Cream Cheese.

  • Cream cheese
  • Butter
  • All Purpose Flour
  • Baking Powder
  • Desiccated Coconut for cookie dough and some more for rolling the cookies with
  • Lemon Zest
  • White Granulated Sugar
  • Coconut Essence

STEPS TO MAKE CREAM CHEESE COOKIES

Beat cream cheese, Butter, Coconut essence, Lemon zest, and Powdered sugar till the mixture is creamy and fluffy

Add flour, baking powder and salt to the cream cheese frosting

Mix well

Add some coconut milk and form a tight cookie dough

Chill the cream cheese cookie dough for an hour

Using hands or an ice cream scoop, scoop out some dough, roll into a ball with your palm. Then roll the coconut cream cheese cookie dough balls in desiccated coconut.

Carefully place the cookie dough balls on the baking sheet and bake for 8-10 minutes.

I have some left over cream cheese frosting. Can I make cookies out of them?

Yes, absolutely. Just mix 1 cup of cream cheese frosting with 1 cup of flour and 1 teaspoon of baking powder. That is your cookie dough. Chill the dough for an hour. Scoop out the chilled dough, roll it into desiccated coconut, and bake.

Making frosting for a cake is hard work. And when you have some of that icing left, don’t let all the hard work of whipping up frosting go to waste.

I am not a fan of coconut. Can I use lemon or oranges to bake Lemon Cream Cheese Cookies?

Ingredients
  

  • 1/2 cup Cream Cheese 4 oz
  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1/2 cup Desiccated coconut 100g
  • 5 tablespoons Butter 80g
  • 1 cup White granulated sugar 200g
  • 1 pinch Salt
  • 1 teaspoon Coconut essence

Instructions
 

Step 1

  • Heat the oven to 350 degrees F
    In a large bowl with an electric mixer on medium, beat together the room-temperature butter and cream cheese until combined, about 2 minutes.
    Beat in the granulated sugar, coconut essence, and lemon zest until creamy, 1 to 2 minutes more.

Step 2

  • Whisk flour, desiccated coconut, baking powder, and salt and add to the cream cheese mixture.
    Add milk if the dough gets dry.

Step 3

  • Rest the dough in the refrigerator to chill for an hour or two

Step 4

  • Line a baking sheet with parchment paper.
    Portion the dough into 2-tablespoon scoops. Using your palms make balls and roll the balls on the desiccated coconut
  • Arrange them on the sheets at least 2 inches apart.

Step 5

  • Bake, rotating halfway through baking until the cookies are puffed and set and just beginning to turn golden, 10 to 12 minutes.
  • Transfer baking sheets to wire racks until cookies are completely cooled.
