Like bananas, there is almost always one or two apples lie around in that fruit basket craving for attention. Since from last week or so, I have been thinking about baking a snack cake. Somedays, me and my husband are so busy with meetings and calls that we hardly find time to eat breakfast or lunch. I keep healthy snacks handy in the pantry all the time but then.., there are days, when you crave something cakey to enjoy with your coffee. Well, this easy one bowl apple cake happened – out of necessity. 🙂 Sort of. :p
What I liked the best about this apple cake recipe is that, its such an easy recipe to make. Everything I needed was right there in the panty. There is no butter needed for this recipe. And the light olive oil makes this cake so fluffy and moist. Honestly, a super simple, easy-to-throw-together apple cake.

It’s a great tasting snack cake
Ingredients needed for this One Bowl Apple Cake
Flour – I have used all purpose flour in this easy apple cake recipe. I have also baked this same cake with half GF flour and half regular flour with same amazing result.. I still have to try with whole wheat flour and almond flour in this recipe.
Brown Sugar – Brown sugar compliments so well with nutmeg and apples.
Apples – I have used granny smith apples
Nutmeg – I used about a table spoon of nutmeg in this recipe. Because I’m super crazy about nutmeg. You can either replace cinnamon with nutmeg or use both cinnamon and nutmeg.
Eggs -Eggs provide structure, leavening, richness, color, and flavor to this apple cake. Though most of my cakes are egg free, I still have to try this recipe without eggs to see the result.
Oil – Whisking oil and sugar together is one essential tip to make the cake spongy, fluffy and moist. Whisk until the mixture becomes fluffy because of incorporation of air.
Baking Powder – I have only used baking powder. No baking soda is used here in this recipe.
Vanilla Essence

How to make Apple Cake in One Bowl?

- In a large bowl, beat sugar, eggs, oil till light and fluffy
- Add the flour, baking soda, salt, nutmeg and mix it gently
- Fold in the shredded apples
- Spoon into your prepared cake tin Sand even the top.

Be sure to select baking apples for this recipe. Baking apples hold their shape when baked, so the chunks of fruit won’t turn into applesauce in the oven. Tart-sweet varietals such as Granny Smith, Honey Crisp, Pink Lady, Braeburn, and Jonagold are all good options. Feel free to combine different varieties for a more nuanced flavor.
Frequently Asked Questions on Easy One Bowl Apple Cake
What kind of apples are best for Easy Apple Cake?
Bon Appetit says the best apples for baking are Jonagold, Honeycrisp, Braeburn, Mutsu, Winesap, Pink Lady (Cripps Pink) but they also use Granny Smith often. I have used Granny Smith apples in this recipe. You can make this cake your own with a mix of tart and tart-sweet apples, such as Gala or Fuji.
How to avoid a dry apple cake?
A dry cake is usually the result of using the wrong ingredients, making mistakes while mixing the batter, or baking the cake too long or at too high a temperature. Once you understand how to avoid the common cake-baking blunders, you’ll bake a moist cake every time. To avoid baking a dry cake –
Use Ingredients Called For and Measure Carefully
Follow Exact Mixing Steps
Avoid Overbaking
Can I replace butter with oil in this recipe
Yes, absolutely. However, the texture of cakes made with oil is—in general—superior to the texture of cakes made with butter. Oil cakes tend to bake up loftier with a more even crumb and stay moist and tender far longer than cakes made with butter.
Can I replace cinnamon with nutmeg?
Yes, you can! Even though, I think this cake tastes great on its own you can add some cinnamon and nutmeg to the batter. Or, just the cinnamon. Both spices pair well with apples.
How else can you serve Easy Apple Cake?
Vanilla Ice cream – Apple cake and vanilla ice cream are my favorite combination.
Caramel Sauce – If you don’t want ice cream with your apple cake, drizzle some homemade warm caramel syrup on top.
Whipped Cream – Though I haven’t tried this cake with whipped cream but hey, whipped cream goes on anything, right!!
Sugar Dust – For a lighter take, dust a bit of confectioners’ sugar over top and that’s what I did.
How do you store Easy Apple Cake?
Room Temperature: Fresh apple cake stores well at room temperature for about 3 days.
Refrigerator: This cake will stay fresh in the refrigerator in an airtight container for 4-5 days.
