So yes!! If you want to treat your holiday guests (throughout the year), nothing fits the bill as perfectly as this Eggless Olive Oil Vanilla Cake with Dry Fruits! This is such a wonderful, light, fragrant cake to enjoy with your tea or coffee.

And, yes! This Pound Cake with Dried Fruits is egg free, butter free and alcohol-free.

You can bake this cake year-round and will not get enough of this Pound Cake with Dried Fruits which is neither heavy nor boozy. I used the store-bought candied fruits (a combination of dried orange peels, oranges, pineapple, etc) to bake this Pound Cake with Dried Fruits.

You know what reminds me of this cake!! The Britannia Tutti Fruitti Cake that I grew up eating and was so fond of! Now that I know how to bake my cakes, it feels so empowering as I can play around with the ingredients as well as control and decide what should go in my cake without compromising the taste at all.

So, in this Vanilla Cake with Dried Fruits, I used oil instead of butter (oil in cakes makes them stay fresh longer, makes the cakes spongier and less dense), Greek yogurt instead of eggs (some people have dietary restrictions on eggs)!

INGREDIENTS YOU WILL NEED TO MAKE VANILLA OLIVE OIL SNACK CAKE

  • Flour: all purpose flour is used in making this cake. It makes the cake soft and tender. You could use entirely wheat flour or a mixture of half plain flour and half whole wheat flour. I am sure the cake texture will be good either way.
  • Extra flour to coat the dried fruits
  • Cornstarch
  • Baking soda, Baking powder
  • Salt
  • Yogurt
  • Sugar
  • Olive oil: I used light olive oil in my cakes. You could use any flavorless oil like vegetable oil or canola oil. Melted butter can be used in this cake as well
  • Vanilla extract or orange extract or rose water
  • Dried fruits: You can use a mixture of any dried fruits as you prefer. I recommend using raisins, dates, tutti fruity.

STEP BY STEP METHOD TO MAKE EGGLESS DRY FRUITS SNACK CAKE

STEP 1: Preparation

  • In a small bowl toss some all-purpose flour with dried fruits and set aside.
  • Preheat oven to 350 F/180 C degrees.
  • Lightly butter or spray a baking pan (I used an 8 x 4 loaf pan) with nonstick spray and set it aside.

STEP 2: Sift the dry ingredients

  • In a bowl whisk together all-purpose flour, baking soda, baking powder, and salt. Set it aside.

STEP 3: Mix the Wet Ingredients

  • Beat yogurt and sugar until smooth. You can mix with a hand mixer. Add oil, vanilla extract, and mix until combined.

STEP 4: Make the cake batter

  • Start adding the flour mix in parts, don’t dump the entire thing in one go. Mix until just combined and do not over-mix.
  • Fold in the dried fruits.

STEP 5: Bake the Egg free Olive Oil Cake

  • Pour the batter into the prepared loaf pan. sprinkle the milk on top
  • Bake for around 45-50 minutes or until a toothpick inserted in the center comes out clean.
  • Remove cake from oven and let it cool completely before slicing into pieces

TIPS to MAKE THE BEST VANILLA DRY FRUITS OLIVE OIL CAKE

Dry your own fruits

If you are not fond of a particular fruit, feel free to omit it and substitute it with another.

You may also just go for a single dried fruit than mixed dried fruits.

 Use a cream cheese frosting if you want to fancy it up.

Ingredients
  

DRY INGREDIENTS FOR OLIVE OIL CAKE

  • 2 cups All purpose flour (180 grams)
  • 2 table spoons Flour to coat the dried fruits
  • 2 table spoons Cornstarch
  • 1/2 tea spoon Baking soda
  • 1 tea spoon Baking powder
  • 1/4 tea spoon Salt

WET INGREDIENTS FOR THE CAKE

  • 1 cup Fresh Greek yogurt, 8 oz/240 ml you can use regular yogurt but make sure its fresh and isn't very sour
  • 3/4 cup Sugar, 150 grams
  • 1/2 cup Olive oil, 4 oz/120 ml Light Olive Oil
  • 1 table spoons Vanilla extract or orange extract or rose water
  • 3/4 cup Mixed dried fruits
  • 1 table spoon Milk

Instructions
 

PREPARATION

  • Pre-heat oven to 350 degree F
  • Lightly butter or spray a baking pan (I used an 8 x 4 loaf pan) with nonstick spray and set it aside

WHISK THE DRY INGREDIENT FOR THE DRIED FRUITS CAKE

  • In a bowl whisk together all-purpose flour, baking soda, baking powder, and salt. Set it aside.

MIX THE WET INGREDIENTS

  • Beat yogurt and sugar until smooth. You can mix with a hand mixer. Add olive oil, vanilla extract, and mix until combined.

COMBINE DRY INGREDIENTS WITH WET INGREDIENTS

  • Start adding the flour mix in parts into the wet ingredients. Don't dump the entire thing in one go. Mix until just combined and do not over-mix.
  • Fold in the dried fruits.

BAKE THE EGGLESS DRIED FRUITS OLIVE OIL CAKE

  • Pour the batter into the prepared loaf pan. sprinkle the milk on top
  • Bake at 350 F degrees for around 45-50 minutes or until a toothpick inserted in the center comes out clean.
