This sweet, spicy and sour grilled pineapple and jalapeno mocktail will add an island vibe to your summer pool side parties!

OKAY!! I love my wine. There is nothing like relaxing with a glass of cab after a long day at work. Wine is good for you.., but no wine is even better for you. I have given up on alcohol for the next two months and, honestly speaking, I don’t miss it at all.., but then I’m not a frequent drinker – I enjoy a glass of wine once a week and some citrusy cocktails here and there. So, no wonder the absence of alcohol means anything. 

While I’m on my no-alcohol months, I do crave for a good looking mocktail in a good looking cocktail glass. This jalapeno pineapple mocktail fits the bill – made with pineapple juice, fresh jalapeño, grilled pineapple, this non-alcoholic summer beverage is so refreshing and oh so yum!

WHY YOU WILL LOVE THIS PINEAPPLE MOCKTAIL

This drink is non-alcoholic. Its a Mocktail. But then with that good of a taste, do you even need to add alcohol to your beverage?

You don’t need to be on a tropical vacation to enjoy this drink. This grilled pineapple drink is filled with tropical vibes!!!

Pineapples are good for you. Full of vitamin C!

The charred pineapple slices add a depth to the flavor profile.

Jalapenos make it a tad spicy. just the right amount of kick.

Super easy to put together. Everything is readily available from jalapeno to pineapple. 🙂

The pineapple jalapeno mocktail has a sweet, spicy and sour mix going on with fresh pineapple juice so you’ll get an entire range of flavors that are sure to please your palate.

This is a perfect poolside drink on a hot day.

I LOVE Grilled Pineapple and I can’t stress this enough. When you grill the fresh pineapple, it caramelizes the sugars and intensity the sweetness. And then when you muddle a bit of Jalapeno with the grilled pineapple, the heat from Jalapeno adds the right amount of spiciness and it tastes oh-so-good.

INGREDIENTS YOU WILL NEED TO MAKE JALAPENO PINEAPPLE DRINK

  • Jalapeno
  • Pineapple
  • Cilantro leaves
  • Fresh Lemon Juice
  • Pineapple Juice: In this recipe, I have used store bought Pineapple Juice
  • Agave: To sweeten my mocktail, I have used agave. Switch agave for simple syrup.
  • Sparkling water or soda

HOW TO GRILL PINEAPPLES

Pineapples taste divine when they are grilled. When charred, the sugar in pineapple caramelizes, thus imparting an amazing depth of taste into the grilled pineapple drink.

  • Cut pineapple into 3 inch squares or triangles.
  • Heat up a cast iron grill pan on the stove. 
  • Brush pan with vegetable oil. 
  • Place pineapple slices on the pan and grill for 3 to 4 minutes on each side.

HOW TO PREPARE JALAPEÑO FOR THE GRILLED PINEAPPLE JALAPENO DRINK

If you aren’t use to handle hot peppers, then practice some tips while cutting them. Always wear a glove or wash your hands thoroughly after you cut them.

  • First, cut the stem off the jalapeno.
  • Slice the jalapeno in half and use a spoon to scrape out the seeds and membrane.
  • Cut into slices

NOTE – If you like it a tad spicy, then don’t discard the seeds.

HOW TO RIM THE GLASSES WITH SPICY SALT

Rimming your cocktail glass with some spicy salt is such a super easy to elevate your drinks.

  • In a bowl or plate, add some chili salt ( my go to chili salt is from Trader Joe’s).

NOTE: You can make your chili salt by adding 1/2 tsp chili powder to 1 tbsp table salt. Give it a good mix.

  • Cut a lemon or lime and run the lemon wedge around the rim of your cocktail glass. Immediately holding the cocktail glass upside-down by the base, dip the entire rim into the chili salt, so that the crystals stick to the outside of the glass.

STEP BY STEP INSTRUCTIONS ON MAKING THE GRILLED PINEAPPLE MOCKTAIL

STEP 1: Grill the pineapple slices. Keep aside

STEP 2: Cut the Jalapeño and keep aside

STEP 3: Rim the cocktail glasses with spicy salt.

STEP 3: In a cocktail shaker, muddle jalapeno, gave. Add pineapple juice and ice. Give it a good shake.

STEP 4: Pour into the cocktail glasses and enjoy!!

VARIATION AND TIPS

  • Grilled Jalapeño  Grill a few jalapeño or two and muddle them with the pineapple juice to get a smoky flavor.
  • Add Cilantro to make Grilled Jalapeño Cilantro Pineapple Mocktail: Muddling a few tablespoons of fresh cilantro adds a lovely herbal flavor to the drink.
  • Add tequila to make it a Grilled Pineapple Jalapeno Margarita.
  • Adjust the jalapeños for your spice preference.
  • Add in a splash of other fruit juices or syrups like mango, passion fruit, or orange.
  • Rim the glass with Tajín
  • Pour the whole mixture into popsicle molds to make grilled pineapple jalapeno pops!!!

Ingredients
  

  • 4 or 5 pieces Fresh Pineapple (to grill)
  • 1 Jalapeno cut into small sizes
  • 2 Tbsp Fresh Lemon Juice
  • 1 Cup Pineapple Juice
  • 1/4 Cup Chilled sparkling water/Club soda
  • 2 Tsp Agave/Simple syrup (optional)
  • Chili Salt to rim the glasses

Instructions
 

LET'S GRILL THE PINEAPPLE

  • Cut pineapple into 3-inch squares or triangles.

TIME TO MAKE THE GRILLED PINEAPPLE JALAPENO MOCKTAIL

  • In a cocktail shaker, muddle a few grilled pineapple pieces, a small piece of Jalapeno, some Lemon Juice, and agave for a few minutes to release the flavors. 
  • Add ice cubes and pineapple juice. Shake vigorously.
  • Pour into the cocktail glasses (leaving some space on top). Top with club soda or sparkling water, and Garnish with some jalapeno and grilled pineapples. Enjoy!!

Notes

NOTE: You can make your chili salt by adding 1/2 tsp chili powder to 1 tbsp table salt. Give it a good mix.
NOTE: If you like it a tad spicy, then don’t discard the seeds from the jalapeno.
NOTE: If you have leftover grilled pineapples, enjoy that with some vanilla ice-cream

  19. We are wine lovers too. We have yet to do the “no wine” thing. Keeping it for a Saturday night is where we are. It is a challenge when we have a wine cellar in the basement. This drink reminds me of a nice “south” vacation spot.
