With three easy steps, this Instant gulab jamun recipe gives you the same quality, taste and texture of traditional gulab jamun. The bread is crushed into an almost fine powder. The breadcrumbs are mixed with a bit of milk powder and then kneaded into a soft pliable gulab jamun dough with the help of some milk. The balls are slow fried into a beautiful golden color and then soaked in a saffron infused sugar syrup. Doesn’t that sound wonderful already?

INGREDIENTS USED IN BREAD GULAB JAMUN

Bread

I have used wheat bread in this recipe. You can use white, brioche bread. Just make sure to take off the crust.

Milk Powder

I have used milk powder to combine with the powdered bread. You can you waffle mix/pancake mix as a replacement of milk powder.

Whole Milk

I have used couple tablespoons of full fat milk to make the gulab jamun dough. I think using cream in place of milk will result in richer gulab jamun.

Sugar

I have used white granulated sugar to make the sugar syrup

Cardamom & Saffron

Cardamom and saffron is used to flavor the sugar syrup.

STEP BY STEP PROCESS TO MAKE BREAD GULAB JAMUN

Make the sugar syrup first

Take one cup of sugar with one and half cup of water. Heat this until the sugar dissolves. Add crushed cardamom and a pinch of saffron in it. Remove it from flame. 

Make breadcrumbs

Take the crust off the bread. Add the bread pieces in a mixer and mix them into a fine powder. Mine gave me about 2 cups of bread powder.

Mix the Milk Powder

Mix in about 2 tbsp milk powder in the bread crumbs.

Make the Gulab Jamun Dough

Start adding milk to the bread powder and milk powder mix. Start with 1 tbsp. You may need up to 4 to 5 tbsps. of milk. Make a not too soft nor too hard dough.

Shape into balls

Roll them into cracked free smooth balls.

Soak in hot syrup

Deep fry on medium-low flame until they are golden in color. Let them cool. Dunk them into a hot sugar syrup. Let them rest in sugar syrup bathe for at least 2 hours.

How to avoid hard bread gulab jamuns?

Make sure that your dough isn’t too dry or too wet. Knead the bread gulab jamuns into smooth balls. Also, don’t fry the gulab jamuns in hot oil. Frying in hot oil will make them cooked from outside and not from inside. While making the dough, add warm milk, little by little until you have a soft dough.

How do I store the bread gulab jamuns?

Gulab Jamuns can keep well in the fridge for up to 20 days. Whenever you want to serve, just microwave for 10-15 seconds. They can be frozen for 3-5 months.

What is the right consistency of my sugar syrup for gulab jamuns?

The sugar syrup shouldn’t be thick. If the syrup is thick then the gulab jamuns won’t soak the syrup and you will fail to get that spongy and moist texture. Turn off the heat as soon as the syrup thickens slightly.

Why do gulab jamuns crack while frying?

It should not be too sticky or too dry, else it may break while frying. When you knead the gulab jamun dough, make sure there are any lumps in it. Do not knead it for too long either. As soon as you get a smooth and binding dough, start shaping the gulab jamuns.

Equipment

  • 1 Sauce Pan To make sugar syrup
  • 1 Non-stick Pan To fry the Gulab Jamun
  • 1 Mixer Grinder To make bread crumbs

Ingredients
  

FOR SUGAR SYRUP

  • 1 Cup Sugar
  • 1 and 1/2 Cups Water
  • 1 Pinch Cardamom Powder
  • 1 Pinch Saffron

FOR GULAB JAMUNS

  • 6 Slices Bread with the crust trimmed off
  • 3 TBSP Milk powder
  • 3 to 4 TBSP Milk 
  • Oil for frying

Instructions
 

MAKE SUGAR SYRUP FOR BREAD GULAB JAMUN

  • In a non-stick sauce pan, heat sugar, water, cardamom powder and saffron
  • Simmer for 4/5 minutes till the sugar syrup turns slightly thick. It shouldn't form a string.

MAKE BREAD GULAB JAMUN

  • In a blender, blend the crust free breads into a fine powder.
  • Add the bread powder to a bowl. Mix the milk powder. Add the milk 1 TBSP each and knead into a smooth and soft dough.
  • Once the bread gulab jamun dough is ready, make small balls out of the dough. Make sure there are no cracks on balls. You can grease your palms with a bit of ghee too.
  • Heat the oil or ghee on low flame drop the gulab jamuns into the oil. Fry the balls on low flame stirring consistently. Fry till the balls turns golden brown.
  • Drop the hot jamuns into hot sugar syrup. Cover and rest for 2 hours.
