I had made a Red Velvet Cake years ago for a friend’s birthday. The friend lives far away but I had baked the cake and taken it to work to share with my work buddies. The cake was gone within minutes. Mind you, I was new to baking and I didn’t have a blog back then to draft and share my recipes. So yes, I don’t have that recipe anymore. I miss it.
This time, I felt like making a microwave red velvet cake in a mug to treat myself while binge watching Narcos Mexico. And oh boy, am I glad that I did. Slightly inspired from Pioneer Woman’s Red Velvet Mug Cake this recipe is a must try who loves cakes and not so much into sharing :P.
The best part about red velvet cakes is that it has that moist, chocolaty and absolutely irresistible taste. Topped with a generous amount of white chocolate chips, every bite is celebration in itself.
And, you don’t even need an oven or any baking equipment! All you need, is a microwave safe mug. I also think, this no fail red velvet mug cake will make a beautiful single serve date night dessert. Especially when Valentine day is around the corner, now you got yourself a recipe to try on someone special eh!!!

How to make microwave red velvet cake?
Stir milk, vegetable oil, red food coloring, vanilla extract and white vinegar together in a microwave safe coffee mug. Stir in flour, sugar, cocoa powder, baking powder and salt, until smooth and lump free. Top with white chocolate chips.
Cook in microwave for 1 minute and 15 seconds.
Serving suggestion:
Enjoy the cake hot as soon as you remove from the microwave. Some mug cakes tend to get a little dry if left at room temperature for a long period of time.

No Fail Red Velvet Mug Cake
Ingredients
- 3 tbsp. Milk
- 1 tsp Apple cider vinegar
- 12 drops Red food coloring
- 3 tbsp. Vegetable oil
- 1/4 tsp Vanilla extract
- 1/4 cup All-purpose flour
- 3 tbsp. Granulated sugar
- 1 tsp Unsweetened cocoa powder
- 1/4 tsp Baking powder
- Salt
Instructions
- Combine the milk and vinegar in a 12-ounce microwave-safe mug.
- Stir in the food coloring with a fork until blended, then stir in the vegetable oil and vanilla.
- Add the flour, granulated sugar, cocoa powder, baking powder and salt.
- Stir until smooth, making sure there are no lumps of flour of cocoa in the bottom of the mug.
- Microwave on high for 1 minute 15 seconds to 1 minute 30 seconds, or until a toothpick inserted into the center come out clean. (Make sure you don't overcook the cake or it will be dry.) Let cool for 2 to 3 minutes.
