This mouth-watering no-cook Rose Cardamom Shrikhand recipe is so easy to prepare!! Made with thick Greek yogurt, powdered sugar, and flavored with cardamom and a hint of rose water, this creamy and utterly delicious sweetened yogurt recipe can be enjoyed as a sweet frozen treat any time of the year!


WHAT IS SHRIKHAND
Shrikhand is this thick, creamy and delicious Indian dessert made with thickened yogurt (strained yogurt), powdered sugar and flavored with cardamom. You can safely call it Indian Frozen Yogurt. The key to making a no-fail Shrikhand is straining the fresh yogurt to remove liquids and then whisking until creamy.
This sweetened yogurt is creamy, smooth, and rich. It has to be one of my favorite summer sweets of all time. This dessert comes from Indian states – Gujrat and Maharashtra, where it’s popularly known as Amarakand. This sweetened yogurt is very different than Misti Doi from West Bengal.
Trust me, making Shrikhand is easier here in the USA because of the great quality Greek yogurt that we get here. With Greek Yogurt, you don’t have to strain it for a long time since Greek Yogurt is already thick and creamy as is.

INGREDIENTS USED TO MAKE ROSE CARDAMOM SHRIKHAND RECIPE
Whole-milk Greek yogurt. If you don’t have Greek Yogurt available, you can use regular yogurt. Make sure to use fresh yogurt that doesn’t have a sour taste.
Rose Water. I have used a little bit rose water in this recipe. You can skip rose water with saffron if you aren’t fond of rose water.
Ground cardamom: About 1 tsp or 4 green cardamom pods, seeds removed
Sugar. I have used white granulated sugar.
STEP BY STEP INSTRUCTIONS TO MAKE SHRIKHAND RECIPE
Step 1: DRAIN THE YOGURT
Line a large colander with cheesecloth, overlapping them so they cover the sides.
Place the colander inside a large bowl.
Add yogurt into the colander and let drain in the refrigerator for about 4 or 5 hours.
Yogurt should be very thick—like an even creamier, richer Greek yogurt.

Step 2: PREPAPRE THE CARDAMOM POWDER TO FLAVOR
Finely grind cardamom seeds.
Step 3: MAKE SHRIKHAND
Transfer strained yogurt to a large bowl and mix in rose water, cardamom, and sugar
Chill at least 2 hours and up to 8 hours before serving.

VARIATIONS OF ROSE CARDAMOM SHRIKHAND RECIPE
Add blanched and slivered almonds and chopped pistachios. The crunchy nuts contrast nicely with the smooth shrikhand.
Finely diced fresh mangoes work well too
You can also use coffee filters or paper towels instead of cheesecloth/muslin cloth.
Pipe shrikhand into profiteroles and pop them in the fridge!
Make a Shrikhand Cheesecake.
Pour the rose cardamom shrikhand into popsicle molds and make shrikhand pops or shrikhand kulfi.
Pour the rose cardamom shrikhand on a flat baking sheet. Sprinkle nuts and seeds of your choice. Freeze it for a couple of hours and then break it into uneven pieces to enjoy as shrikhand barks.

How to strain the Greek Yogurt
Straining the yogurt is THE key part in making a great tasting creamy rose cardamom shrikhand. Pour the Greek yogurt into a thin clean cloth. Hold the ends together and squeeze out the excess whey. Then tie the ends and place it into a colander with another pot below it to collect the dipping whey for few hours.
What sugar to use to sweeten the rose cardamom srikhand
Use white granulated sugar. Avoid using liquid sugar like sugar syrup, molasse, honey, maple syrup, etc. The idea is to keep the shrikhand creamy and thick. Liquid sugar will add liquid to the texture making the shrikhand runny.
What kind yogurt to use to make srikhand
Fresh yogurt is the best. If you are going to use homemade yogurt/curd, make sure your yogurt is very fresh and has no sour taste whatsoever. If you have Greek yogurt available, then use Greek Yogurt in making Shrikhand.
You get the creamy and rich taste only if you use full fat yogurt. Don’t go for reduced fat or fat free yogurt to make shrikhand. The taste and texture won’t be same.
After you have the strained yogurt and you aren’t going to make shrikhand right away, then store the strained thickened-up yogurt in the refrigerator.
What spices and flavoring to use
Use fresh spices. make your cardamom powder. If you are going to use nutmeg, then use fresh nutmeg. The freshness of the flavoring makes a big difference in taste.
How long to whisk the yogurt to make creamy shrikhand
You don’t have to whisk for a long time. Mix everything in the strained yogurt and whisk for 2 or 3 minutes to get that creamy texture.
Can I make Vegan Shrikhand?
Of course!! Use any non-diary yogurt-like – cashew, almond, or oat and make a delicious shrikhand by following the same procedure.
STORAGE AND SERVING IDEAS
Rose cardamom Shrikhand can be eaten chilled and can be a real refresher after very spicy and hot meals.
Shrikhand tastes excellent when eaten with dried or even fresh fruits like mangoes.
Shrikhand (probiotic) when eaten with deep fried poori, is a meal with low glycemic index. Also, since fat is important for feeling of satiety, it reduces chances of overeating. This simple meal is healthy and safe for all, including people with obesity, diabetes or heart disease.
You can store the rose cardamom shrikhand in the refrigerator up to a week.
