Sabudana (tapioca pearls) :

HOW TO MAKE EASY SABUDANA KHEER – Nutritious dessert recipe

STEP 1:

Rinse the sabudana under running water until the water runs clear. Soak the sabudana in enough water for about 2-3 hours or until they become soft and translucent.

STEP 2:

Heat ghee in a pan and add the chopped nuts. Fry them until they turn golden brown. Remove and keep them aside.

STEP 3:

In the same pan, add the soaked sabudana and sauté for a few minutes until they become slightly translucent.

STEP 4:

Add milk to the pan and bring it to a boil. Reduce the heat and let it simmer for about 10-15 minutes, stirring occasionally.

  • In a deep pan, heat ghee and fry the dry fruits until they turn golden brown. Remove them from the pan and keep them aside
  • In the same pan, add the soaked sabudana and sauté them for a few minutes until they become slightly translucent
  • Add milk to the pan and bring it to a boil. Then lower the heat and simmer the milk till the milk thickens and reduces by volume.
  • Add the tapioca pearls to the simmering milk and let the sabudana cook in the milk until they become soft and transparent. Stir occasionally to prevent sticking
  • Once the sabudana is cooked, add the grated or powdered jaggery to the pan. Stir well until the jaggery melts and combines with the milk.
  • Add cardamom powder to the kheer and mix well. Let it simmer for another 5-10 minutes to allow the flavors to blend.
  • Turn off the heat and garnish the kheer with the fried almond slices
