HOW DO I MAKE SPICY POTATOES – STEP-BY-STEP PROCESS

STEP 1 – Prepare the Potatoes

Clean the baby potatoes really well. Make holes on the potatoes using a fork. Boil the potatoes with the skin on till they are cooked but not mushy.

TIP – you can skin the potatoes if you don’t like the skin. But the key is to form the potatoes well so that they not only boil easily but also they will absorb the flavors well.

STEP 2 – Prepare the dry spice blend for Potato

Dry roast the sesame seeds, cumin, coriander, dried red chili powder. Once the dry roasted spices cool down, using a dry grinder, grind the spices into a coarse blend.

STEP 3 – Make No Garlic, No Onion Potato Masala Base

In a non-stick pan, heat oil. Add the potatoes with salt, turmeric and Kashmiri chili powder. Roast the potatoes on medium flame for few minutes till you get a beautiful char on them.

Remove the potatoes from the pan.

In the same pan add more oil and let the oil heat up. Once the oil is hot enough, add paanch foran.

Add the potatoes to the pan along with turmeric, chili powder, green chilies, salt, curry powder, crushed ginger. and yougurt.

Lower the heat to low and give the potatoes a good stir so that all the masala get coated.

Cover the pan with a lid and let the potatoes cook in low heat for 10/15 minutes. Make sure to check from time to time so that the masala potatoes don’t burn.

Once the potatoes are cooked and absorb all the flavors, sprinkle the crushed sesame and peanut mixture and mix well.

In the end, add garam masala, chopped cilantro

Curry Spiced Potatoes
Choose the right potatoes

Opt for starchy potatoes as as they tend to become soft and creamy when cooked, enhancing the overall texture of the dish.

Spice it up:

Experiment with a variety of spices to create a flavorful blend.

Adjust the spice level:

Adjust the amount of red chili powder according to your spice tolerance. If you prefer a milder version, reduce the quantity or substitute it with paprika for a smoky flavor.

Pre-cook the potatoes:

Parboil the potato cubes for a few minutes before adding them to the pan. This will help speed up the cooking process and ensure that the potatoes are evenly cooked.

Sauté the spices:

Toast the spice mixture in hot oil before adding the potatoes. This step helps release the flavors and aromas of the spices, enhancing the overall taste of the dish.

Cook on low heat:

Cooking the potatoes on low heat allows them to absorb the flavors of the spices slowly, resulting in a more flavorful and tender dish.

Stir occasionally:

While cooking, stir the potatoes occasionally to prevent them from sticking to the pan and ensure even cooking.

Increase the heat for crispiness:

Towards the end of cooking, increase the heat to medium-high to give the potatoes a slightly crispy texture. This step adds a delightful crunch to the dish.

Garnish with fresh herbs:

Sprinkle freshly chopped coriander leaves or parsley on top of the spicy potatoes before serving. This adds a burst of freshness and complements the flavors of the dish.

Serve hot:

Spicy potatoes are best enjoyed when served hot. The flavors are more pronounced, and the textures are at their best when the dish is freshly prepared.
